Oven roasted tomatoes

  • 6 tomatoes
  • 12 basil leaves
  • 6 cloves garlic
  • 6 black olives, halved
  • 1 bunch oregano
  • 1 cup olive oil (250 millilitres)
  • Salt and pepper


  1. Preheat the oven to 325 degrees Fahrenheit
  2. Remove the stems from the tomatoes and cut them in half across their equators. Lay the tomatoes in a baking try, cut side up and place a garlic clove and a couple of basil leaves on top of each one. Sprinkle the oregano over the tomatoes and drizzle with olive oil. Sprinkle salt and pepper over the top. Bake in the oven for 50 minutes.
